Whisk until combined and no clumps remain. In a small bowl, combine powdered sugar, cinnamon, almond milk, and vanilla. While the pop tart is cooling, make the glaze.Remove from the oven and let cool completely. Bake at 350F for 35-40 minutes, until the edges of the crust are lightly browned.Generously poke holes into the top of the pastry.The filling needs something to give it structure. Alone, brown sugar will liquify in the oven, bubble out around the edges and cool into a brittle, caramel-like substance. The dough itself is made in a food processor then chilled and rolled out This is such a fun way to incorporate the kids in the kitchen with you since there isn’t a lot of steps to this besides dumping ingredients. Gently press the edges closed with your fingers. At any rate, getting a good brown sugar cinnamon filling at home involves more than just mixing up brown sugar and cinnamon ( pfft, too obvious). Place other rectangle of pastry dough on top of the filling.Spoon filling onto the pastry and spread with a spatula, leaving about 1/2 inch border. Place one rectangle of pastry dough on a baking sheet lined with parchment paper.To make the filling, combine brown sugar, cinnamon, gluten-free flour, melted vegan butter, and molasses in a bowl until a paste has formed.I like to place mine back into the freezer for 10 minutes for better handling. Whisk the egg and milk together in a small bowl. Once the dough is chilled, roll out into two rectangles about 8×11 inches each, about 1/4 inch in thickness. Line two baking sheets with parchment paper or silicone mat and set aside.Pat into a flat circle and chill for at least 30 minutes.You may not end up using all of the water. ![]() Remove from food processor and place in a bowl, add in water one tablespoon at a time just until your able to pinch it together.Add cold vegan butter and pulse until butter is the size of peas, with some bigger pieces.In a food processor, add gluten-free flour, xanthan gum, salt and sugar and pulse to combine.3 tablespoons vegan butter (melted and slightly cooled).3 tablespoons gluten-free all purpose flour.2 teaspoons xanthan gum (if your blend doesn’t already contain it).If you have any filling left over, you can sprinkle that on top of the glaze as well.Prep: 20 mins – Cook: 40 mins – Resting: 1 hr – Total Time: 2 hrs Ingredients Once cooled, spoon onto each pop tart or thin out the glaze and drizzle on top. While pop tarts bake/cool, make glaze by adding all ingredients together and stir until well combined.While warm, you can sprinkle a little more filling on top and the heat will melt it just a little bit. Remove from the oven and place on a cooling rack. If not using the egg wash, bake for 20-25 minutes or until golden brown. Remove and brush each top with remaining egg wash, place back in the oven and continue baking until golden brown. Place in the oven and bake for 10 minutes.Using a toothpick, place several holes in the top to allow for steam while baking. Gently press all edges to seal and then finish using the tines of a fork. For the brown sugar cinnamon filling, simply measure and place. Brush each “top” with egg wash and lay that side down onto the “bottom” covering filling. For Frosted Strawberry poptarts place one tablespoon of jam in the center. Using the remaining half of dough, roll out the same as you did for the bottoms, getting 6-7 “tops” measuring 3”x4” each. ![]() Using a pastry brush, egg wash each of the “bottoms” and spoon approximately ½ – 1 tblsp filling in the center.Place them on your prepared baking sheet evenly spaced. Roll out to about ¼“ thick and using a ruler or your paper template, cut out your bottoms, re-rolling dough to get 6-7 small rectangles. You’ll be making 6 “bottoms” measuring 3”x4” each. Remove one half of the dough, leave the other covered in the bowl.Add filling ingredients to a small bowl and stir to combine, set aside.Pre-heat oven to 400° and line baking sheet with parchment paper or liner. Place in a bowl, cover with plastic and set aside. ![]() Bring to a boil and simmer for 2 minutes, stirring frequently.
